Quinoa tex-mex salad
Preheat the oven to “broil”.
Cook the quinoa as directed on the packaging.
Once cooked, set aside 1/3 cup of quinoa.
Meanwhile, fry the bacon in a pan until golden brown. When the bacon is almost ready, add the onions and peppers to the pan. Cook over medium-low heat for about 8 to 10 minutes.
In another pan, cook your egg to your preference.
In a baking dish, add and spread the quinoa at the bottom. Then add vegetables, bacon and egg on top. Sprinkle the dish with grated cheese and brown in the oven.
Serve with sour cream and lime wedges.
