Fresh salmon with cucumber
Preheat the oven to 400 °F (200 °C).
Apply parchment paper to two baking sheets. Set aside.
Peel the sweet potato and cut it into thin fries. In a bowl, mix the fries with a drizzle of oil, garlic and chili powder. Add salt and pepper to taste. Spread fries on a baking sheet.
Bake potatoes in the oven for about 20 minutes or until tender. Turn the fries halfway through cooking time.
Cook the salmon drizzled with fresh lemon juice in a large skillet over medium heat for about 12–15 minutes.
In a small bowl, mix the sour cream, cucumber, dill, lemon juice, salt and pepper to create the sauce.
Serve salmon with sauce and sweet potato fries. Garnish with fresh dill sprigs.
