Grilled chicken and blueberry sauce
Preheat the oven to 400 °F (200 °C).
In a large bowl, combine the broccoli with a drizzle of oil and seasonings to taste (salt, pepper, garlic…). Mix well to coat broccoli with seasonings. Spread broccoli on a baking sheet and bake for 15 to 20 minutes or until broccoli is tender.
Melt the coconut butter in a skillet over medium heat. Fry the chicken on both sides and continue cooking for 10 minutes on each side, adding the fresh lemon juice. Cut the breast in half to verify that there isn’t any pink left. If it is still pink, it is not quite ready. Continue cooking.
When the chicken is almost fully cooked, add the chopped onions and garlic to the pan.
As you are cooking the chicken, mix blueberries, balsamic vinegar and maple syrup in a blender to create the sauce.
Add the sauce to the chicken and serve with grilled broccoli. Garnish with crushed pecans.
