Mint white fish
Preheat the oven to 400 °F (200 °C).
Apply parchment paper to two baking sheets. Set aside.
Peel the sweet potato and cut it into thin fries. In a bowl, mix the fries with a drizzle of oil, garlic and chili powder. Add salt and pepper to taste. Spread fries on a baking sheet.
Place the fish on another pan and pour the lemon juice over the fillets.
Bake potatoes in the oven for about 20 minutes or until tender. Turn the fries halfway through cooking time. Cook the fish at the same time for about 20 minutes, depending on the thickness of the fish.
In a small bowl, combine the mayonnaise, sriracha sauce and garlic to create the sauce.
Serve fish with sauce, fresh mint, sweet potato fries and grilled peppers.
