“Muffin style” omelet
Preheat the oven to 350 °F (170 °C).
Finely chop the turkey slices and the spinach.
In a bowl, whisk together eggs and egg whites. While whisking, add the coconut milk and season with salt and pepper. Stir in chopped turkey and spinach.
Oil 4 muffin cups with coconut oil and pour the egg mixture evenly into the muffin cups. Add the grated cheese over the egg mixture.
Bake the omelets for 20 minutes or until the texture is firm.
