Cottage cheese and tuna salad
In a small bowl, combine the maple syrup, lemon juice and olive oil (or mayonnaise) to create the vinaigrette. Set aside.
Cut the spinach finely and slice the tomatoes in half.
In a small bowl, coarsely mix tuna, cottage cheese, dried cranberries and green onions with a fork. Set aside.
Spread spinach and arugula on a plate. Add the tuna mixture and tomatoes. Serve with the vinaigrette.
