Arugula salad with dates
Finely chop the spinach and cucumber.
In a large plate, lay down the spinach and arugula as the base of the salad. Add the avocado and cucumber.
In a small bowl, combine olive oil, lemon juice and balsamic vinegar to create the vinaigrette.
Pour the vinaigrette on the salad. Add parsley, salt and pepper to taste.
